バンコク滞在中家でいただく夕飯と言うとだいたいおかずは「和とタイ」。それにご飯は「赤米入りのタイ米とお味噌汁」と言う組み合わせになる。時にはお味噌汁がゲーンチューになったりトムヤムになったり・・・、和とタイのMIX夕飯である。
この日は私だけお味噌汁の代わりにタイ東北地方の家庭料理「ゲーン ノーマイ」が出た。
このスープ、辛~くて少々苦みと臭みもあるクセのあるスープ。この独特なクセがこれまた病みつき♪になる味と香りなのだが・・・。(父と母はNG)
スープはヤナンと言う植物の葉を水で揉んで抽出した液を使う。これをストレートでいただくと喉がゲホッ、ゴホッ。かなりの濃い~い苦みの液体である。ベースのスープにこの液体を加え、具はのあの独特の臭みのあるタイ竹の子に香味にパクチーラーオ(ディル)を加えたスープ。
ベースのスープにはホームデーン、干しエビ、塩蔵したサワラの身(写真左)etc・・・入っておりコクと旨みもある奥の深いお味のスープなのだ。
辛さも唐辛子のパンチがかなり効いているので、毎回これをいただく際は、眼に涙、ティシュ片手に「美味しいけど辛いよ~」と泣きながらいただく事になる1品である。
