友人のS先生より「貝殻亭の石本シェフが12月半ば頃千葉にお店をオープンさせるよ～」とメールをいただいてオープンしたら年内には1度！と思っていた。石本シェフは8月の貝殻亭での「桃の会」の時白桃を使ったフルコースをみごとに仕上げてくださった方で、とても楽しみにしていた。
ル・クールとはフランス語で「ハート」、「心」と言う意味だそうで、店内は15名程のテーブル席とカウンター3席のアットホームな雰囲気の中、有機野菜、地産地消にこだわり、旬の食材をいかした石本シェフのこだわりのお料理をゆっくり楽しめる。ワインも有機、自然派ワインに力を入れており、シェフのお料理を知り尽くしている酒屋さんから仕入れているとの事。

１．外は紫中はオレンジのパープルスティックと言う人参、大根と人参をあわせたような味のフレンチクオーターと言う根菜、皮が黒い黒大根、中が紫の紅芯大根、赤カブなど野菜のそれぞれの味が濃く根菜の食感もしっかり残っているシェフ独自の漬け方をしたの自家製ピクルス。白ワインビネガーの按配がほどよくいただくと止まりません。
２．3種類のオリーブ、実はオリーブがわりと苦手な私ですが美味しくいただきました。
３．豚のリエット。パンは自家製胡桃パン。大好きなリエット！塩加減が抜群でこのままでも美味しい！クルミパンとのバランス○。このクルミパンは他のお料理のソースとも良く合い、気がつけばお皿が変わるごとにパンをいただいていました。

３．ホタテノカルパッチョトリュフ風味。ホタテの甘味が広がった後にトリュフがフワ～ッ！ソースの酸味と塩加減がホタテの甘味とトリュフを引き立てる程よい加減。
４．あおり烏賊のソテー イカ墨とパセリのバター風味ソース。イカ墨好きにはたまらない美味さ！
４．フォアグラのフラン 牛蒡とレンコンのスープ。滑らかなフォアグラのフランにレンコンのシャキシャキとした食感を楽しめ牛蒡の香りがたっぷりのスープ。

６．サワラのミキュイ 菜の花のピューレー サワラのソース。ミキュイとは半焼き、半生というフランス語と教えていただきサワラは程よいミディアム状態でした。サワラの骨から出汁を取ったソースはサワラの味が濃厚、でも菜の花のピュレーの苦味がとても良くあってすごく食べやすい。皮がものすごくパリパリで香ばしい！年の瀬を感じさせる百合根が添えられている。
７．黒豚のソテー きのこソース。黒豚のソテーの下にはジャガイモの中で私が大好きなインカの目覚め！のマッシュ。黒豚はしつこくなくさっぱり、きのこの風味たっぷりで濃厚に見えてさっぱりした味わいのソースにインカ独特の甘味。濃厚だけどサッパリ感のあるソースは何？と伺ってみたらマスタードとの事。教えていただいて改めていただくと確かに最後にスッとほのかに舌にマスタードのを感じる。
８．ブランマンジェとキャラメルアイスクリーム キャラメルソースと共に。シェフが「大人のデザートです」とおっしゃっていたのが良くわかります。キャラメルアイスクリーム美味し～い！アーモンドの香りたっぷりの滑らかなブランマンジェの甘さとキャラメルアイスクリームの絶妙な苦味がたまらない！キャラメルアイスクリームの苦味が本当に程よく、アイスクリームだけでもいくらでもいただけてしまいそうになり、大人のデザートとおっしゃったのが納得。
オランジェのシェフバージョンとクロッカン。グレープフルーツの皮で作ってあるシェフバージョン、グレープの酸味が通常オレンジで作られているオランジェよりさっぱりいただける。 クロッツカンも甘さ控えめでカリッ！美味しかった。
1皿1皿お野菜の味が濃くそれぞれの食材の味を楽しめお腹いっぱいの幸せなディナーでした。しかもこのディナーコースお値段がなんと￥5,250－！ちなみにランチは￥2,100－です。
1本目は飲んだ瞬間微量の炭酸を感じる軽めのローヌ地方の赤をいただき、2本目にいただいたのがデラウェアから作られた山梨の白「シャトー酒折」。ワインリストの中に国産の白ワインが1本入っていたので気になりいただいてみました。国産のワインはちょっと甘すぎて苦手なイメージが多い私でですが、これは飲みやすく（ジュース感覚と言うと失礼かもしれないのですが）嫌味の無い甘さでスッと入っていってしまう危険な1本でした。
お料理に対するこだわりが伝わるキラキラした目をなさった石本シェフと笑顔がとてもすてきで可愛らしいフロアーの小川さんのサービス。お二人との会話も楽しく、お二人のル・クールを感じる美味しく楽しいひと時でした。
